Method

In a large pot, heat the olive oil over medium heat (if using). Add the chicken thighs and brown them on both sides for about 3-5 minutes. This step adds flavor but can be skipped if you prefer a quicker method.

Pour in the chicken broth (or water with bouillon) and bring to a boil. If you browned the chicken, scrape up any bits from the bottom of the pot for extra flavor.

Add the chopped celery, sliced carrots, and diced onion to the pot. Bring back to a boil, then reduce heat to low and simmer for about 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
