Baked Eggplant Parmesan

Serves 8

Ingredients

Non-stick spray

1 1/2 pounds eggplant

1 teaspoon salt

2 eggs

1 1/2 cups bread crumbs

4 tablespoons grated Parmesan cheese

1 teaspoon garlic powder

2 teaspoons Italian seasoning

1 cup tomato sauce

1 cup mozzarella cheese, shredded

*Spaghetti of choice* cook according to package directions

Method

  1. Preheat oven to 375°F. Line a large baking sheet with foil and spray with non-stick spray.
  2. Slice eggplant into 8 (3/4 inch) slices. Place on a plate with paper towels underneath, sprinkle with salt, and let sit for 30 minutes or until liquid forms. Rinse and pat dry with paper towels.
  3. Whisk eggs in a shallow dish. In another dish, combine bread crumbs, Parmesan, garlic, and Italian seasoning.
  4. Dip eggplant in eggs, then coat in bread crumbs. Place on the baking sheet and repeat with all slices.
  5. Spray tops of coated eggplant with non-stick spray.
  6. Bake for 12-15 minutes, until tops are golden. Flip and bake for another 12-15 minutes, until tender.
  7. Remove from oven, increase temperature to 400°F. Top each slice with 2 tbsp tomato sauce and cheese. Bake for 8-10 minutes, until cheese is golden.
  8. Serve over zucchini noodles or spaghetti of choice.
